I bought some cornbread last week from Colorado Smokehouse Catering and BBQ in Colorado Springs, Co. I put the cornbread into the freezer overnight to harden up. I then took it and cubed it. I melted honey butter in a frying pan and put the cornbread cubes in and fried on all sides. It's actually good. If I left the cornbread out and it remained soft, it wouldn't work out. Here's a picture of it.

Corn Fritters From Colorado Smokehouse BBQ - 5/21/2015
Hello, everyone. Last night after dinner, I went over to Colorado Smokehouse Catering & BBQ on N. Academy & Flintridge in Colorado Springs, CO. I ordered corn fritters. The manager said it would take a few minutes to make the batter. Unfortunately, the eggs on hand to make the batter were frozen. So, the manager went to the store and bought fresh eggs. He came back and gave the eggs to the cook and made these corn fritters served with 100% honey and rolled them in powdered sugar.

Colorado Smokehouse BBQ Now in Colorado Springs - 5/18/2015
Hello. I found out that Colorado Smokehouse BBQ and Catering is now in Colorado Springs, CO. They opened this past weekend. I had their chopped brisket sandwich and fried mushrooms. Also pictured are their different sauces. I will review the sauces in future posts. Pictures below.

Does Your Coffee Taste Like Coffee? - 5/15/2015
Hello. I went to Jack In The Box on Austin Bluffs and N. Academy Blvd. in Colorado Springs, Co. earlier this week for a morning cup of coffee. The coffee was in an air pot. I poured some in and it tasted like brewed iced tea. Needless to say that I was more than disappointed. The young lady that was working the front counter put the brewed iced tea into the wrong air pot. This was quickly remedied. You may want to do a sniff test on your coffee to make sure that it's coffee the next time you go to Jack In The Box.

Mini Churro Soft Taco - 5/4/2015
Hello, everyone. I made a mini churro soft taco for my dessert tonight. It's the same ingredients as the Chocolate cream cheese quesadilla with cinnamon brown sugar finishing butter on the tortilla but I added 2.5 mini churros from Jack In The Box to make into a soft taco. Here's a picture of the product before i folded it over.

Chocolate Cream Cheese Quesadilla - 5/3/2015
Hello. In honor of Cinco De Mayo, I decided to make a Chocolate Cream Cheese Quesadilla. Here is a picture of the ingredients before I made it.
I took a 6 inch flour tortilla and spread some Cinnamon brown sugar finishing butter on both sides. Then, I pan fried the tortilla on both sides for 30 seconds to 1 minute. After pan frying the tortilla, I placed it on a plate and spread the chocolate cream cheese on it thinly. You don't want to put a lot on it or it will be messy. Here is the finished product. Notice the cream cheese peeking through.
The finishing butter gave the tortilla a good caramelization. It was delicious. You should try this for your Cinco De Mayo party. That's it for this post. Until my next post, have a great day.
