Hello.
Last Friday, I made bourbon maple coconut cookies. Here are the ingredients.
Bourbon Maple Syrup from Trader Joe's
Shredded Sweetened Coconut
Sugar Cookie Dough
Coconut Milk
I started with a maple coconut glaze that is 2 parts Bourbon maple syrup and 1 part coconut milk.
Then, I shaped the sugar cookie dough into bite size dough balls. I rolled the dough in the shredded coconut and tossed them into the glaze.
I baked them at 350 degrees F for 12 to 13 minutes. Let cool before you handle them. You can glaze the cookies when they come out of the oven and hear them crackle. Here's a picture of the finished cookies.

Churro S'mores - 10/26/2015
Hello,
Here's a quick and easy treat. Churro S'mores. Instead of graham crackers, I used a churro that I cut into 6 even pieces. I cut them lengthwise almost all the way through. I then put a teaspoon of marshmallow cream and a piece of chipotle chocolate. Here's the picture of the finished product.

Chai Chocolate Chip Cookies - 9/25/2015
Hello again.
Before work today, I made a different kind of cookie for my coworkers up in Centennial, CO. I decided to make Chai Chocolate Chip cookies. I took some refrigerated chocolate chip cookie dough and rolled it in Mt. Baker Chai Spice Seasoning from Savory Spice Shop in Colorado Springs, CO.
I baked them for 10 to 12 minutes at 350 degrees F. I allowed the cookies to cool for 5 minutes before bagging them and taking them to work. While going to another building, my trainer had to lock them up. If he didn't, they would be gone. That's why I'm The Goodie Guy.

Combo Cookies - 8/15/2015
Hello, everyone.
It's a boring Saturday morning. Last night, I bought sugar cookie dough and chocolate chip cookie dough. Why not combine the two. So, I did. I also used heart shaped mini fondant cutters and created combo cookies. Here's a picture of what I made.
What I did with the cookie on the top left is cut out a mini heart shape out of the sugar cookie dough and replaced it with chocolate chip cookie dough. The top right cookie is a combination of the two cookie dough together. The cookie on the bottom I did the same thing as the top left cookie but put the sugar cookie dough in the center of the chocolate chip cookie dough and baked at 350 degrees for 10 to 14 minutes.

Open Faced Chocolate Chip Cheesecake Cookies - 7/31/2015
Hello. My latest creation is open faced chocolate chip cheesecake cookies. I placed cheesecake filling on the flat side of 2 chocolate chip cookies and sprinkled them with black onyx chocolate sugar. Here's the picture.

Cocoa Cookie Butter Pizza Danish - 6/28/2015
Hello, everyone.
I went to Trader Joe's today for some plain pizza dough for $1.19. What did I do with it? I made Cocoa Cookie Butter Pizza Danish. I took about an half to one ounce of pizza dough and rolled it in flour. After that, I worked the dough and made it into a 3 to 4 inch circle. Then, I put a dollop of cocoa cookie butter on it and sprinkled black onyx chocolate sugar on it. I baked it for 10 minutes at 350 degrees. I took it out of the oven and placed a slice of fresh banana on it. Here's the picture.
The banana looks better freshly sliced on than baked with the pizza danish. Try it for yourself. It's better to cook cheap than to buy it already made. Also, I was called a chef by Belen DeLeon of KUSA Channel 9 in Denver, Co.

BBQ Nachos From Colorado Smokehouse - 6/5/2015
Hello. I recently went to Colorado Smokehouse Catering and BBQ in Colorado Springs, CO. I ordered a plate of BBQ Nachos. I had them with chicken, pulled pork and beef brisket. They make their own pico de gallo in house and cheese sauce as well. Here's a picture of it.

Cornbread Croutons - 5/25/2015
Hello, everyone. Happy Memorial Day.
I bought some cornbread last week from Colorado Smokehouse Catering and BBQ in Colorado Springs, Co. I put the cornbread into the freezer overnight to harden up. I then took it and cubed it. I melted honey butter in a frying pan and put the cornbread cubes in and fried on all sides. It's actually good. If I left the cornbread out and it remained soft, it wouldn't work out. Here's a picture of it.

Corn Fritters From Colorado Smokehouse BBQ - 5/21/2015
Hello, everyone. Last night after dinner, I went over to Colorado Smokehouse Catering & BBQ on N. Academy & Flintridge in Colorado Springs, CO. I ordered corn fritters. The manager said it would take a few minutes to make the batter. Unfortunately, the eggs on hand to make the batter were frozen. So, the manager went to the store and bought fresh eggs. He came back and gave the eggs to the cook and made these corn fritters served with 100% honey and rolled them in powdered sugar.

Colorado Smokehouse BBQ Now in Colorado Springs - 5/18/2015
Hello. I found out that Colorado Smokehouse BBQ and Catering is now in Colorado Springs, CO. They opened this past weekend. I had their chopped brisket sandwich and fried mushrooms. Also pictured are their different sauces. I will review the sauces in future posts. Pictures below.

Does Your Coffee Taste Like Coffee? - 5/15/2015
Hello. I went to Jack In The Box on Austin Bluffs and N. Academy Blvd. in Colorado Springs, Co. earlier this week for a morning cup of coffee. The coffee was in an air pot. I poured some in and it tasted like brewed iced tea. Needless to say that I was more than disappointed. The young lady that was working the front counter put the brewed iced tea into the wrong air pot. This was quickly remedied. You may want to do a sniff test on your coffee to make sure that it's coffee the next time you go to Jack In The Box.

Mini Churro Soft Taco - 5/4/2015
Hello, everyone. I made a mini churro soft taco for my dessert tonight. It's the same ingredients as the Chocolate cream cheese quesadilla with cinnamon brown sugar finishing butter on the tortilla but I added 2.5 mini churros from Jack In The Box to make into a soft taco. Here's a picture of the product before i folded it over.

Chocolate Cream Cheese Quesadilla - 5/3/2015
Hello. In honor of Cinco De Mayo, I decided to make a Chocolate Cream Cheese Quesadilla. Here is a picture of the ingredients before I made it.
I took a 6 inch flour tortilla and spread some Cinnamon brown sugar finishing butter on both sides. Then, I pan fried the tortilla on both sides for 30 seconds to 1 minute. After pan frying the tortilla, I placed it on a plate and spread the chocolate cream cheese on it thinly. You don't want to put a lot on it or it will be messy. Here is the finished product. Notice the cream cheese peeking through.
The finishing butter gave the tortilla a good caramelization. It was delicious. You should try this for your Cinco De Mayo party. That's it for this post. Until my next post, have a great day.

Dark Chocolate Peanut Butter Sliders - 4/28/2015
Hello, everyone. I didn't buy dessert tonight. So, I had some dark chocolate peanut butter, a four pack of King's Hawaiian rolls and some cinnamon brown sugar finishing butter and created Dark Chocolate Peanut Butter Sliders.
I cut each roll in half and pan fried them in the cinnamon brown sugar finishing butter and then put the dark chocolate peanut butter between the two halves. It's quite good. Here is a picture of them before I ate them.

Strawberry Array - 4/12/2015
Hello, everyone. I celebrated my 43rd birthday yesterday. The day before that, I was at a dinner for International students that are interns at The Broadmoor Hotel in Colorado Spring, CO. I decided to make a "Strawberry Array" plate. Here is a picture of it minus the ones I made with Nutella.

Waffle House Sauce - 4/5/2015
Happy Easter, everyone. Last week, I had the chance to go to Waffle House in Colorado Springs, Co. for breakfast. While I was waiting for my order, the place card on the table promoted their new Waffle House sauce made by Heinz. I asked my server for 2 packets of them. One of them I used on my breakfast and the other one I took home.
The taste reminds me of a mild chipotle sandwich spread.

Thin Mint Sandwich Cookies - 2/22/2015
Hello, everyone. Today is a snow day from most churches in Colorado. I bought some Thin Mint Girl Scout Cookies in front of the King Soopers in Colorado Springs on Friday. I was bored and made Thin Mint Sandwich Cookies. On one, I put creamy peanut butter between 2 cookies and on the other one, I put pumpkin spice cream cheese between 2 other cookies. This picture shows the peanut butter one on top and the pumpkin spice cream cheese one on the bottom.

French Fry Heaven Out Of Business In Colorado - 2/18/2015
Hello, everyone. I found out today from the Colorado Springs Gazette that French Fry Heaven is out of business in Colorado. Their last day was 2/15/15. Not even 8 months in business. That's shorter than Jake's Wayback Burgers was in business in Colorado.
It looks like not enough customers who wanted expensive french fries with toppings. It's getting cheaper and cheaper to make our own fries and toppings. Stretch that dollar like it's rubber.

Sweet Toast From Doug's Breakfast & Lunch - 2/14/2015
Happy Valentine's Day to everyone.
Yesterday, I went to Doug's Breakfast & Lunch in Colorado Springs, CO. I had their Sweet Toast French Toast. It's cracked wheat berry bread dipped in their orange batter with hints of vanilla and cinnamon. Here's the link for this picture.

Any Size Coffee & Soda Going Up - 1/31/2015
Hello. I went to the McDonald's on Austin Bluffs Parkway & Barnes in Colorado Springs, CO. I ordered a sausage biscuit and a large coffee. I was told by one of the managers that today was the last day for any size coffee and soda for $1. As of Feb. 1, the price goes up to $1.19 plus tax. Whenever the minimum wage goes up, the majority of the menu items' prices go up as well.
I would rather buy a grocery store brand 2-liter of soda instead of paying that price. You'll probably see a decrease in sales starting next month due to price increases. As far as that coffee is concerned, McDonald's doesn't have the single UHT liquid creamers anymore. It's all powdered. I'm not a fan of powdered cream. I would avoid McDonald's coffee unless it was free.

Perils Of Single Dining - 1/25/2015
Hello, everyone. Today, I went to the Old Chicago restaurant located at N. Academy & Austin Bluffs Parkway in Colorado Springs, CO. I dined alone. I ordered the Chicago 7 Stromboli with fries and a side of beer cheese sauce. I was in the middle of my meal when I had to use the restroom. I left my hat on the table as a place setting to notify them that I would return. Upon my return, my hat and food had been taken away. I asked my server where my food and hat had gone. Another employee cleared my table prematurely.
I was upset that this had happened to me. A manager on duty came to me and apologized that this situation happened. She had the cooks to make my order again for to go. I didn't even get my bill. The manager took care of it. I also e-mailed the general manager and service manager what had transpired. I have not heard back from either of them yet. I hope that this doesn't happen again to me or any other single diners. I always dine alone because nobody has the time to come be with me and enjoy my company.

MoonTower Queso - 1/18/2015
Hello. On Jan. 16, 2015, I went to MoonTower Tacos in Denver, CO. On a recommendation from a producer at 7 News, I tried the MoonTower Queso. It is a combination of fresh tomatoes, green onions and peppers cooked with melted cheeses. It is topped with guacamole, queso fresco and candied jalapenos. My order was served with chips. Here is a picture of it.

Sweet Latino Donut From Glazed & Confuzed - 1/17/2015
Hello, everyone. Yesterday, I had a paid day off and went to Denver, CO. I had another chance to go to Glazed & Confuzed. This time, I had the Sweet Latino donut. It's a triple chocolate glazed donut with cinnamon chips. Here is a picture of that donut.

KFC Daily Specials Up $1 - 1/9/2015
Hello. I went into a KFC restaurant in Colorado Springs, CO. today. I found that their Daily Specials went from $2.99 to $3.99 on Monday, Wednesday and Thursday. The Tuesday daily special stayed the same. This was told to me because of the minimum wage increase that started last week was the reason for the price increase.
I will have to start going there less and less because that price increase would price me out. Would that price increase price you out too? Let me know.

Mint Hot Cocoa Pancakes - 1/3/2015
Hello. This morning, I made Mint Hot Cocoa Pancakes. I made 2 cups of prepared Land O Lakes brand mint hot cocoa and mixed it into one package of complete pancake mix from King Soopers. I made 3 servings of these pancakes for $1.10. This is cheaper than your typical order of fast food pancakes. Here is a picture of my serving.

Sausage Biscuits Are Cheaper At Waffle House - 1/1/2015
Hello and Happy New Year!
I went into a McDonald's today and saw that their Sausage Biscuit is $1.19 plus tax. I went into Waffle House down the street and saw that their Sausage Biscuit is still only $1.00 plus tax. I may have to switch from going to McDonald's to Waffle House for my breakfast.
In Colorado, the minimum wage is now at $8.23 an hour for non tipped employees and $5.21 an hour for tipped employees. I feel that the prices are only going to be going up and up. In 2015, people will have to stretch their food dollars like they are rubber.
I made a New Year's resolution to cook more food and spend less money on it. I hope that you will make the same resolution.
